I use a Canon 5D with a Sigma 15mm f/2.8 Fisheye at f/8, focused at about 10 metes. I use a collection of (modified) Manfrotto parts to make the camera rotate in portrait orientation around the No Parallax Point of the lens at these settings. 50% overlap, 10 shots + 1 nadir + 1 zenith. RAW conversion by Rawshooter Pro and stitching with PTGui, postprocessing with Photoshop CS2, QTVR generation with Pano2QTVR. That's it really ; )
The technical quality is flawless, but the wall is so close and I can't step away from it... (not that you can see that here)... What sort of equipment do you use for these shots?
